Description

In craft fermentation, acidity control (Total and Volatile Acidity) currently relies on sporadic laboratory tests, which depend on external analyses that detect deviations only after they have already occurred. CRAFTSENSE proposes a paradigm shift: treating these parameters not as isolated outputs, but as dynamic biochemical signals to be continuously monitored throughout the entire fermentation process.

Objectives

  • Develop low-cost optical diagnostics for the rapid measurement (in less than 10 minutes) of Total and Volatile Acidity, directly on the production line
  • Create adaptive calibration mechanisms capable of compensating for variations in the fermentation matrix, while maintaining measurement reliability over time
  • Integrate uncertainty quantification into every measurement to strengthen analytical credibility and regulatory defensibility
  • Develop predictive analytics on the trend of acidity over time, capable of identifying risks of deviation up to 48 hours earlier than traditional laboratory methods
  • Integrate operational guidelines into the workflow to reduce procedural variability in small and medium-sized enterprises
  • Validate the entire architecture in real production environments to enable scalable adoption among European SMEs in the craft fermentation sector
